Eggs Benedict

Eggs Benedict.

Although I totally faked this hollandaise and used the package sauce, I had to poach the eggs using a pot of water and not a egg poacher. Here is some of my favorite Eggs Benedict recipes from other chefs:

* Traditional Eggs Bennie: http://allrecipes.com/recipe/eggs-benedict/
* Simple Hollandaise (Tyler Florence): http://www.foodnetwork.com/recipes/tyler-florence/hollandaise-sauce-recipe/index.html
* How to Poach Eggs in Hot Water: http://www.youtube.com/watch?v=KtZ14xEbgzg

Favorite Add In's: Bacon, Spinach, tomatoes, crabcakes, hotsauce.

JalapeƱo Bacon Waffle

Jalapeno Waffle with Bacon, Mmm.

Although my brother in law actually made this, it was an idea I had while at their house for brunch. I will try this again using a corn type mix and maybe some sweet peppers.

Throw a piece of bacon on the waffle grill and let cook a bit. Throw the jalapeno pieces on there. We used canned jalapenos here. As soon as those are mostly cooked, pour the waffle batter in and close up.

This was too amazing not to share, especially if you love bacon, waffles and jalapenos.
